Recipe: Summer berries with ganache

Serves 4

Time 10 minutes


You will need

450g/1lb mixed summer berries (fresh or frozen)

For the white chocolate ganache

200ml/7floz pouring cream

200g/7oz white chocolate, broken into bits


1. To make the ganache place the cream into a small saucepan and bring to the boil. Remove from the heat and pour the boiling cream into the chocolate and mix well until completely smooth.

3. Divide the summer berries between some decorative glasses and pour the white chocolate ganache on top.
