Recipe: Oriental salmon

Serves 12

Time Overnight


You will need

12 salmon darnes

1 tbsp sesame seeds

For the marinade

2 tbsp honey

110ml/4fl oz soy sauce

2 limes, cut into wedges

2 cloves garlic, crushed

1 inch root ginger, crushed

2 red chilies, cut into chunks

For the salad

2 carrots

1 courgette

50g/2oz cashew nuts

1 tbsp rapeseed oil

Pinch chilli flakes


1. Mix together all the ingredients for the marinade in a large bowl. Add in the salmon darnes and mix well to ensure they are completely coated. If time allows leave the salmon darnes overnight to marinade.

2. Line a deep roasting dish with some baking parchment. Place the salmon darnes and the marinade in the roasting tray and bake for 20 minutes. Remove from the oven, allow to cool down and refrigerate overnight. Sprinkle with sesame seeds

3. Using a vegetable peeler, peel the carrots and courgettes into long ribbons and place into a large bowl with the rapessed oil, chilli flakes and cashew nuts. Arrange the salad onto a large platter and then arrange the salmon on top.
