Ireland has become a beacon of fine dining, punching well above its weight on the Michelin star stage. The 2021 Michelin Guide Great Britain & Ireland sees the island of Ireland with 21 Michelin Star restaurants, 18 in the Republic of Ireland and three in Northern Ireland. This year there was a new One Michelin Star for Ireland, Dede at the Customs House in Baltimore, Co Cork. There were three new Michelin Green Stars – for commitment to sustainable gastronomy. Four new Michelin Bib Gourmand restaurants. Dublin chef Ross Lewis of Chapter One won the ‘Chef Mentor‘ award and Northern Ireland restaurant Noble in Holywood won the ‘Service and Welcome’ award. And a well deserved mention of Irish woman and three-Michelin-star chef, Clare Smyth MBE - the first and only British-based female chef to hold three Michelin stars in the UK, and only the fourth British-based chef in history to receive the honour. She is the owner of Core by Clare Smyth in London and will soon be opening Oncore by Clare Smyth in Sydney, Australia.
